Iron Goddess of Mercy/Ti Kwan Yin - A Traditional Oolong Tea

Iron Goddess of Mercy is a traditional Oolong tea, also known as Ti Kwan Yin (also Ti Kuan Yin, Tieguanyin, and Iron Buddha ). This oolong tea was named after the Chinese Goddess of Mercy 'Guanyin' (or Kwan Yin). Legend has it that the Chinese Goddess of Mercy bestowed a single tea shoot to a poor farmer who had taken it upon himself to care for her temple. Another interesting name for this tea is the 'Tea of Poets'.

This organic Oolong comes from the Fujian Province in China, where tender leaves are tossed in baskets after harvesting to immediately start the oxidation process. The leaves are light green and tightly rolled and go through a moderate roasting. The entire process is very complex, consisting of 8 separate steps (plucking, sun withering, cooling, tossing, withering, fixation, rolling, and drying). It sounds simple enough, but it is very complicated and If the leaves are not processed correctly by experts, the tea will fall short of its namesake.

Oolong tea, in China, has traditionally been used to promote weight loss. It is thought that this is due to the higher levels of polymerized polyphenols, which have been linked to burning fat. The levels in Oolong tea are significantly higher than in green tea.

The tea leaves of this oolong unfurl slowly and provides a light amber cup, a smooth mouth feel and a dazzling apricot finish. Try sipping it with small bites from a chocolate bar and you will be hooked forever. Pay close attention to the brewing instructions and wake the leaves before your first full steeping, you’ll thank us later! You can re-steep this incredible tea 4-8 times. Just increase your temperature and steeping time just slightly each time.

Out of the many teas I've tried, this is by far my absolute favorite! So smooth and light. A very relaxing tea. It's perfection!
